– Slice potatoes very thin using a mandolin in to a large bowl of ice water. – Preheat oil. – Rinse potatoes off with clean water.

4-6

– Place potato slices onto a clean towel and roll up to dry the chips off. – Place about a dozen potato slices into the oil. – Fry until lightly golden brown.

&

– Place onto paper towel and season IMMEDIATELY.
