Curried Tomato Soup is based on two of my favorite dishes: tomato bisque and Indian butter chicken.

Ingredients

– Saute the onion over medium-low in the olive oil until translucent. – Add the garlic and cook another minute. – Add the tomatoes, cashews, garam masala, karai methi, chili powder, paprika.

– Cook the mixture on low. – Puree the soup in a blender until smooth. – Use a fine-mesh strainer to remove any large pieces.

– Place the soup back over medium-low heat. – Add the coconut milk.
