Mexican Potatoes are a simple fried potato side dish that is packed full of flavor and can work alongside so many different main courses – not just Mexican-inspired dishes! They need just a few Mexican spices, but you can easily adjust the recipe to suit your tastes. Any Mexican seasoning can be added!

– Add potatoes to a bowl with oil and stir to coat. – Combine all of the seasonings, sprinkle over the potatoes, and stir to coat the potatoes evenly.

– Add the oil to a skillet large enough to hold all the potato pieces in a single layer and heat. – Add the potatoes and allow them to brown before stirring or flipping.

– Continue cooking and flipping occasionally until the potatoes are done. – Potatoes are done when they are soft in the middle. – When the potatoes are done, remove them from the skillet and drain them on paper towels or a wire rack before serving.
