Chicken and Pasta Balls

A kid-friendly meal of pasta balls with chicken, carrots, and celery in chicken broth.

Ingredients

  • 32 ounces chicken broth
  • ½ large onion diced small
  • 2 extra large bouillon cubes
  • 2 bone-in chicken breasts
  • 3 large carrots sliced
  • 4 celery stalks sliced
  • 1 pound acini de pepe pasta

Instructions

  • Add chicken broth, onion, and bouillon to a large saucepot.
  • Bring to a boil.
  • Add chicken breast, reduce to simmer.
  • Cook until chicken is cooked through, 30 to 60 minutes.
  • Remove chicken from broth and set aside to cool.
  • Add 12 cups of water to broth and bring to boil
  • Add carrots, celery, and pasta.
  • Boil for 3 to 4 minutes, stirring frequently.
  • Reduce heat to medium and continue to cook until pasta is fully cooked. Stir frequently to keep pasta from sticking to the bottom of the pot.
  • The broth will soak into the pasta.
  • Add more water if a soupier soup is desired.
  • Pasta will continue to swell as it cools.

Notes

Bouillon cubes can be omitted for lower sodium requirements.
