– Preheat oven. Spray bread pan with cooking spray. Line the long sides and bottom with a piece of wax paper or parchment paper. Spray paper with baking spray. – Lightly mash bananas and set aside.

– In a large mixing bowl combine white sugar, vegetable and mix until well combined. – Add an egg, sour cream, and vanilla extract then mix to combine. – Add all-purpose flour baking soda to the mixture and mix.

– Add the mashed bananas and mix just until combined.   – Add walnuts and stir in by hand.

– Add all-purpose flour baking soda to the mixture and mix.

– Place into the preheated oven and bake.  – Remove the loaf from the oven and allow it to cool. – Slice and serve. For a special treat, try spreading with homemade strawberry butter.
