This old-fashioned Coca-Cola Cake is a rich chocolate dessert with a unique flavor from the popular soda. Topped with a Coca-Cola frosting, it's a simple, nostalgic treat that's perfect for any occasion.
Prepare a 9X13 cake pan by lightly spraying with cooking spray, or lightly buttering.
Place the Coca-Cola, oil, and butter into a small saucepan and heat over medium-high heat until the butter has melted and the mixture starts to bubble. While this is heating, start the rest of the batter.
1 cup Coca-Cola, 1/2 cup oil, 1/2 cup butter
Add the sugar, flour, cocoa, baking soda, and salt to a large mixing bowl and whisk to combine.
2 cups white sugar, 2 cups all-purpose flour, 3 tablespoons cocoa powder, 1 teaspoon baking soda, 1/2 teaspoon salt
Pour the hot cola mixture over the dry ingredients and beat until well combined and cooled slightly.
Add the buttermilk, eggs, and vanilla, and mix well.
2 large eggs, 1/2 cup buttermilk, 1 teaspoon vanilla
Pour the batter into the prepared cake pan.
Place into the oven and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and allow to cool for about 10 minutes.
While the cake is cooling, prepare the frosting.
Frosting
Sift the powdered sugar and cocoa into a mixing bowl.
3 1/2 cups powdered sugar, 3 tablespoons cocoa
Place the butter and cola into a saucepan and heat over medium-high heat until it starts to bubble.
1/2 cup butter, 1/3 cup Coca-Cola
Pour hot liquid into the bowl with the powdered sugar and cocoa, add vanilla, and beat until it is well combined and there are no streaks of powdered sugar left.
1 teaspoon vanilla
Spread the frosting over the warm cake.
Allow the cake and frosting to cool completely before slicing.

Depending on weather and other humidity factors, your cake may take a little longer to bake.You can also cherry Coke or Vanilla Coke. When using cherry Coke, we add a layer of cherry pie filling to the top of the cake, then cover it with the warm frosting.Sometimes we add a layer of chopped salted peanut on top of the icing for that Southern Coke and peanuts flavor.Avoid using diet soda in this recipe, as it can cause an undesirable chemical reaction when heated, resulting in a poor-quality cake.
