Instructions
Preheat an oven to 350⁰F.
Prepare a pizza pan by lightly greasing or spraying with baking spray.
Crumble cookie dough over the pizza pan and using your fingers, pat the dough into a 12-inch circle.
Bake the cookie crust in the preheated oven for 16 to 20 minutes or until it is golden brown and doesn’t look wet in the center.
Remove from the oven and allow to cool completely, at least 30 minutes.
While the crust is cooling, make the cream cheese layer by combining the softened cream cheese, sugar, and vanilla.
Once the cookie crust has cooled, spread the cream cheese layer evenly over the crust.
Top with fruit.
If using the optional topping, Heat the jelly in a microwave for 15 to 30 seconds or until the jelly is liquid. Use a pastry brush to coat the fruit with the melted jelly.
Pizza can be served immediately or stored in the refrigerator until time to serve.
Notes
Store leftovers in the refrigerator for up to 3 days. The cookie and the cream cheese layer will be fine, but the fruit will start to decay.
When using fruits like bananas and apples, make sure to use a jelly glaze otherwise the fruit will turn brown.
If using jelly or jam as a glaze, choose a light flavor like apple or apricot. Other flavors may overpower the flavor of the fruit toppings.
Cookie base can be made from any cookie flavor you like. You can also use a homemade sugar cookie dough, you’ll need a recipe that makes 16 to 24 cookies.
To make this as cookies, slice the refrigerated cookie dough into rounds and bake. Allow to cool completely and divide the cream cheese topping evenly between the cookies, spread out like icing, and top with fruit. You may want to cut the fruit for fruit pizza cookies into smaller pieces.
