1/4cupfresh squeezed lemon juicemore may be needed
Instructions
In a large bowl, whip or beat the butter until it is pale yellow.
Add the lemon zest and mix to combine.
Add half of the powdered sugar and mix until well combined. Scrape down the bowl.
Add half of the lemon juice and mix until smooth.
Add the remaining powdered sugar and mix in.
Add the remaining lemon juice and beat until light and fluffy.
Notes
If you want a thinner icing, add more lemon juice 1 to 2 teaspoons at a time, mixing in between.You can use milk or heavy cream to thin the icing if you don’t want to add more lemon flavor with extra juice.This will frost 1 cake or fill about 24 sandwich cookies.
