Prepare 2 cookie sheets by covering with parchment paper or spraying with baking spray.
Add the cake mix, eggs, and oil to a mixing bowl. Add up to one cup of additions like chocolate chips or sprinkles now if using.
Stir until the ingredients become a dough ball.
Scoop the cookies out and place them onto the prepared cookie sheets.
Roll each scoop of dough into a ball.
Place the balls at least 3 inches apart.
Place the cookie sheets into the preheated oven and bake for 8 to 10 minutes. The cookies are done when the centers no longer look wet.
Remove the cookies from the oven.
Allow the cookies to cool completely before removing them from the baking sheets.
Notes
If using Andes Candies as a frosting, place unwrapped candies on the cookies while they are still hot. Once the chocolate has melted, use the back of a spoon to gently spread the melted chocolate around the cookies.
Any flavor of cake mix can be used for cake mix cookies. I’ve used chocolate, spice, butter, Funfetti, and white cake mixes. All of them are amazing.
You can add up to one cup of dried fruit, diced nuts, chocolate chips, or confetti sprinkles.
Red Velvet Crinkle Cookies - roll dough balls in powdered sugar prior to baking.
Small Batch Cream Cheese Frosting: Add 2 tablespoons of softened butter, 4 tablespoons of softened cream cheese, 1 cup of powdered sugar, and a splash of vanilla to a bowl and mix until incorporated. Add a teaspoon of milk if necessary.
