Prepare a 9-inch pie pan by spraying with baking spray. Set aside.
Mix cornmeal and buttermilk in a small bowl and set aside. Allow to sit for at least 5 minutes.
In a large bowl, combine flour, brown sugar, baking powder, and salt. Mix well.
Add eggs and vegetable oil to buttermilk and cornmeal. Mix well.
Add wet mixture to dry ingredients.
Mix just until lumps disappear.
Pour into pie pan.
Place into preheated 400 degree F oven.
Bake for 20 to 25 minutes or until a toothpick inserted into the center of the pan comes out clean.
Remove from oven.
Serve warm with butter and honey.
Notes
Can be doubled and cooked in a small cast iron skillet that has been preheated in the 400 degree F oven.
To make cornbread muffins, use a muffin pan and fill the holes 3/4 full. Bake at 350 Degrees F for 15 to 20 minutes or until they are done. This recipe will make 10 to 12 muffins.
