Rotel Dip is one of those easy dip recipes that you see everywhere and never with the same ingredients in twice! But that’s a great thing because it means there are loads of ways to make it and enjoy it.

Our favorite version of this Rotel Dip recipe uses just three ingredients and takes very little time to make. Then you can play around with other ingredients to make as many variations as you want.

Don’t expect this one to be yellow! It is a light pink color due to the cream cheese instead of processed cheese. We wouldn’t be surprised if this one disappears long before your queso dip.

Rotel Dip Ingredients

  • Cream cheese – for best results use full-fat cream cheese
  • Breakfast sausage – you can use ground beef or ground turkey instead, it just won’t be nearly as flavorful

How to Make Rotel Dip

  1. Allow the cream cheese to come to room temperature, usually takes around an hour.
  2. Brown the sausage and drain off the fat.
  3. Drain the liquid from the can of Rotel.
  4. Combine all ingredients in a pan and heat on low until the dip is warm.

How warm you want the dip to be is entirely up to you. You can even allow it to cool completely and serve it as a cold dip.

What Ingredients Can You Add to This recipe?

One of the great things about Rotel Dip is there are loads of ways you can change the recipe. You can add a few ingredients such as bacon (with or without the sausage), green onions, green chiles, corn, or shredded cheese. You can make it spicier with jalapenos. Or make it creamier by adding some ranch dressing, sour cream, or mayonnaise.

How Do You Heat Up Rotel Dip with Cream Cheese?

You can cook it gently over low heat on the stove top, warm it up in the microwave (just be sure to give a stir every minute or so), or you can toss it in a crock pot on low. You are only waiting for the cream cheese to melt.

Tips and Tricks

  • You can keep cleanup to a minimum if you use the same large skillet to heat it in you used to cook the sausage.
  • Make sure the sausage is well drained. This will help to keep it from getting too greasy.
  • Save the juice from the can of Rotel, if you want a thinner dip, add a tablespoon at time until you find the consistency you like best.
  • The warmer your cream cheese is before starting, the easier it will be to incorporate everything.
  • You’ll want to heat this recipe up. It can be eaten at room temp, (unlike the Velveeta cheese version) but it’s so much better warm.
  • If you’re going to carry this to a game day tailgate, I highly recommend the slow cooker option.

What Else Can I Serve with This Besides Tortilla Chips

If I’m showing up to one of those fancy tailgate gigs, you know the ones where they pull out decorations and tablecloths, I might toast up some sliced baguette or serve it with bagel chips.

Other options include crackers, pretzels, fresh veggies like celery, carrots, and green peppers.

I think people would eat it with a spoon if you’d let them!

How To Store Rotel Dip

Any dip like this that includes cream cheese needs to be in the refrigerator when you aren’t serving it. You can keep it there for up to 3 days in an airtight container.

You can also try freezing it although cream cheese dips aren’t always the best for this. If you want to try, put it in a freezer-safe container leaving a ½ inch gap at the top for it to expand. Store it in the freezer for up to 3 months and defrost thoroughly before serving.

This dip can be eaten straight from the fridge, but we like the flavors better when it’s warm. You can reheat it in a small pan on the stove, in the microwave, and even placed back into a crockpot.

Ingredients

  • 16 ounces cream cheese
  • 16 ounces breakfast sausage
  • 10 oz Rotel

Instructions

  • Set cream cheese on the counter for one hour
  • Brown the breakfast sausage and drain well
  • Drain the liquid from the can of Rotel
  • Combine all ingredients into a pot or skillet
  • Heat over low heat until the dip is warm enough to your liking.

  • There are a lot of optional ingredients you could stick in this recipe for different versions such as; Ranch dressing, Jalapenos, Bacon, Green onions, Corn. and/or Shredded cheddar cheese
  • This is best when served warm to hot.
